Pumpkin Muffins

Some pumpkin muffins are a great seasonal change from the norm.
Ingredients:

4 egg whites
1 egg
2 cups sugar
1/2 cup unsweetened applesauce
15 oz. can pumpkin
1/4 cup canola oil
2 cups flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 tsp. pumpkin-pie spice

Preparation:

Preheat oven to 350 degrees and coat muffin tin with nonstick spray. In a large bowl, beat egg whites and egg until foamy, then blend in sugar, applesauce, oil and pumpkin until smooth. Stir in the rest of the ingredients and mix until smooth.

Fill muffin tins 3/4 full and bake for 35 to 45 minutes or until a toothpick inserted into the middle comes out clean. Cool for five minutes and remove from tins.
